Gentle hills filled with the perfumes of a bountiful countryside that flourishes between the mountains and the sea in the heart of Friuli, in San Daniele. A little town set atop a hill in the embrace of a terminal moraine, a place with a special secret – its unique microclimate. Here, the cool winds from the Alps meet the warm, humid breezes from the Adriatic Sea. The gravely soil is crossed by branches of the River Tagliamento, thus favouring a continuous flow of currents of air which are beneficial for the hams’ natural curing process.
